The Excalibur 9 Tray Food Dehydrator is a top-of-the-line dehydrator with 15 square feet of drying area for those who want the best quality and have a lot of food to dehydrate. It is available in 4-tray and 5-tray models for those with smaller needs. However many trays you want, the Excalibur is the Cadillac of food dehydrators.

If you're looking to preserve food, it's an excellent dehydrator. If you're a raw foodist, the even, low temperature control is a must. The excalibur has an adjustable thermostat that ranges from 95 to 155 degrees F. As explained in Rainbow Green Live Food Cuisine, this refers to the air temperature, not the temperature of the food, which is lower.

All excaliber models come with removable trays, each having a removable screen. You can purchase Teflex Sheets for more liquidy foods.

So far my favoite food I have made in the dehydrator is the Basic Crackers recipe in Rainbow Green Live Food Cuisine. With flax seed, soaked almonds, olive oil, salt, water and cumin, they're absolutely delicious (although a bit oily if you go by the recipe).

My second favorite is Zucchini bread, also from Rainbow Green Live Food Cuisine. This one is made with soaked pecans, soaked raisins, zucchini, golden flax seeds, cinnamon, salt and 1/2 a vanilla bean, which I leave out, simply because I keep fogetting to buy some! It amazes me that there are raw "breads" that are so good for me and retain their live enzymes. (And taste good, and satisfy my craving for bread!)

I've also used it for dehydrating fruits and veggies, all pretty straightforward and with good results.

The dehydrator has a 7" fan, which keeps the food dehydrating evenly, and does make a bit of noise. But I don't find it annoying, and I'm pretty sensitive to sound. If you're unsure about that aspect, try to find one in use to see if it would bother you.
